Kala Masala is the signature spice mix of Maharashtra and
gets its name from its blackish colour which is a result of
dark roasting of ingredients like coriander seeds, bay leaf,
black cardamom etc. which gives a distinct, smoky flavour.
This masala gives the gravy a coarse texture and preserves
the traditional stronger and spicier flavour.
This special masala makes it easy to prepare dishes like
usal, misal or sev bhaji and also egg curry, chicken or
mutton curries.
